Looking for something
light and delicious to eat for lunch or dinner? This salad contains
plenty of fiber and protein to keep you full and energized. It's also
vegan and can easily be made organic and gluten free.
You will need:
1 Cup romaine lettuce
1 Cup chopped spinach
or kale (raw)
1/4 cucumber, chopped
1/2 avocado, chopped
(optional)
2 tbsp of black olives,
sliced
2 tbsp hummus (use your
favorite flavor, but garlic and herb tastes most like Caesar dressing)
1 tsp nutritional yeast
(optional)
